Looks like a great thing to try! I probably would use a mixer to beat the potatoes into a puree right in the pan (don’t try this if you have a coated pan). That’s a great way to make mashed potatoes, too.

Tried the recipe - very good, though the recipe didn’t say when to add the milk, and it gave conflicting amounts of water - 2 cups in all in the ingredients list with only 1 and 3/4 cup in the directions.

I used 2 cups in all, and I also used an extra 1/2 cup of milk. I like a thinner soup, though maybe my potatoes were too large and required thinning the soup down.

I recommend adding some spice - like parsley, rosemary, sage, and thyme. Melting in 4 oz. of Velveeta cheese at the end also was a good idea, and I topped my soup with a dollop of sour cream. :)

Very good - will hopefully be a St. Paddy’s day tradition!
