Gourmet PB & J Panini

The PB & J--with its clean lines, unbelievable taste and sheer simplicity--is a mommy mainstay.

So, how can you dress up this already-tasty staple? Celeb chef and mom Susannah Locketti has a simple recipe for a decadent PB & J Panini. All you need is thick and hearty whole grain bread and some creamy and fruity creativity.

Ingredients:
Two large 1" thick slices of hearty whole grain bread
All natural peanut butter
100% all fruit preserves
Four 2" thick green apple slices (optional)
2 tsp butter

Method:
To start off, heat a panini press until hot. Then spread the peanut butter on the insides of both pieces of bread. If using the apples, place apple slices on the peanut butter of both pieces of bread. After that, spread the jelly on the inside of one slice and top with the other half to form the sandwich. Spread a tsp of butter on both sides of the sandwich and place the gourmet PB & J on the hot press and close. Remove when golden brown and oozing with the yummy fillings. With a sharp knife, cut in half and serve as a mid-day snack with a big cold glass of milk!

Note: If you do not have a panini press, you can use a grill pan or just cook it in a pan like you would a grilled cheese.
