One Apple, Five Ways

Back to school and apple season go hand in hand. So while the kids are doing homework, you can do a little of your own. Momlogic contributor, chef Susannah Locketti, has five fantastic recipes that will make the whole family happy for apples.

Using a melon baller, remove the core from the apple to form a filling cavity. Fill with a small amount of butter, brown sugar, cinnamon and walnuts. Bake at 350 degrees until the skins wilt and the flesh becomes soft.
Apple and Gouda Panini
Layer sliced golden apple and gouda cheese on multigrain bread and close to form a sandwich. Spread a small amount of butter on each side of the sandwich and place in a panini press to brown. Or brown in a pan as you would a grilled cheese.
Potato Apple Pancakes
Shred a potato and some apples in a bowl. Add an egg, 2 tablespoons of flour, plus salt and pepper. Drop batter onto a nonstick skillet coated with olive oil. Toast on both sides and serve with sour cream or apple sauce.
Apple, Walnut and Goat Cheese Salad
Add sliced apples, walnuts and goat cheese to salad greens and serve with your favorite dressing.
Pork Tenderloin with Apples and Onions
Season pork tenderloin with salt and pepper. Grill, bake or saute until done. While it cooks, slice onions and apples and saute in olive oil with salt and pepper until browned. Serve with the pork.
