Forget about high-fat, pre-packaged muffins! Try these two quick breads created by celeb chef and mom Susannah Locketti. They're healthy, low in fat and can be frozen to enjoy all week long.

The surprise ingredient --  fat free ricotta cheese! The cheese not only makes these muffins ultra moist, but adds a healthy dose of protein. The dry ingredients are also sifted three times, creating a light and fluffy bread.

Teach your small ones how to pop one out of the freezer and into the microwave for 30 seconds. They'll learn about time and feel independent. You can also put one of these in their lunch box frozen and they'll defrost perfectly by the time they hit the cafeteria. Both recipes are kid-tested and approved!
