No time in the morning for breakfast? With it being back to school season things can get a little hectic. You'll never skip breakfast again with these speedy meal ideas designed for moms and kids on the go.

Susannah Locketti, mom of two and Next Food Network Star finalist, finds creative solutions for making the most important meal of the day in minutes.

yoplait kid yogurtDress up your yogurt

In a glass, add some Yoplait Kids yogurt. It contains the Omega-3 essential fatty acid, DHA, which helps support healthy brain development in children under the age of 5. Yoplait makes a great any time snack--and is also sold in a bottle for moms on the go.

Get creative and add some chopped fruit, more Yoplait yogurt and more fruit. Sprinkle granola or leftover dry cereal on top and devour. When you are in a rush, just leave the ingredients on the table for the kids to build their own. Yoplait Kids is now offering a $1.50 off coupon available at Yoplaitkids.com.
Fast Food-Style Egg Sandwich

While a whole grain English muffin is toasting, coat a microwave-safe cereal bowl with olive oil cooking spray. Drop in an egg and use the shell to break and swirl the yolk. Season and pop in the microwave for 30 to 40 seconds. Top with baby spinach and a slice of cheese. Microwave an additional 10 seconds and serve on the toasted English muffin.

Frozen Pancakes

For those hectic mornings when you are just about to put the kids on the bus and they announce they haven't eaten breakfast, try this. Buy a box of instant whole wheat pancake mix. Next time you make pancakes, triple the batch. You can even throw in blueberries or chopped bananas to add extra flavor. Freeze the leftover cooled pancakes in Ziploc baggies. When ready, put in the microwave--they'll heat up in 60 seconds and the kids will love them!
Oatmeal

Instant oatmeal microwaves in under two minutes. Top the hot oatmeal with sliced almonds, fresh fruit and drizzle with honey. Or, top with brown sugar, walnuts, dried cranberries, cinnamon and nutmeg.
When choosing your oatmeal, look for instant varieties with at least 3 grams of fiber to keep you full until lunchtime.
Breakfast Burritos

Spread one 1/2 cup of refried beans on a tortilla, top with reduced fat shredded cheddar cheese, and microwave flat until the cheese melts. Top with whatever veggies you have on hand, wrap, and roll on with your morning feeling satisfied. Or, spread some all-natural peanut butter on a tortilla, top with sliced bananas and cinnamon, warm in the microwave and gently roll up.

These are some of my all-time favorite fast, homemade breakfast tricks. I especially love the breakfast burrito. It takes about two minutes and tastes awesome with a little salsa and a sprinkle of taco seasoning between the beans and cheese.
