Hint: It starts with "rotisserie" and ends with "chicken"!

Feeding my family of five is definitely challenging at times. For me, good nutrition is just as important as great taste and variety. A ready-made baked chicken never fails me when I'm pressed for time.
Sometimes "life" gets in the way and you have to move quickly so you don't fall behind. Pulling into the drive-thru at the nearest fast-food restaurant is sometimes a necessity, but not a good habit. Next time you need good food fast, stop at your local grocery store. Grab a hot baked chicken, a package of salad with the dressing included, and a bag of whole grain dinner rolls. For a light dessert, pick up a convenient container of fresh cut fruit from the produce department. Now you've saved time, money, and calories!
Diamonds may very well be a girl's best friend, but a hot rotisserie chicken from the deli department at the grocery store is a busy mom's best friend.
"NIK TIP": Rotisserie chickens are also great for slicing the meat off the bone and making "Chicken Sliders" (mini sandwiches) for lunches, "Cheesy Chicken Nachos," and "Creamy Chicken Salad" with crackers (recipe below).

CREAMY CHICKEN SALAD
2 cups cooked chicken, chopped
½ cup mayonnaise
¼ cup sweet & hot mustard
¼ cup celery, chopped
¼ cup onion, chopped
2 tablespoons pickle relish
Salt & pepper, to taste
1. In a medium bowl, mix together chicken, mayonnaise, mustard, celery, onion, pickle relish, salt, and pepper.
2. Serve chicken salad on crackers, bread, or a bed of lettuce. Enjoy!
