I must admit, Khloe and Lamar's wedding was breathtaking, but the food was fantastic!
Chef Nikki Shaw: Before I get started, let me give you a visual. After the drinks and appetizers on the lawn, we were escorted down the hill and around the pool. We arrived at a beautiful large tent covering the tennis court. As I entered through the sleek curtain over the doorway, I felt as though I had stepped into an all-white modern fairy tale. The room was filled with elegant mirrors, chandeliers, and a shiny white dance floor. Celebrity DJ Kid Capri kept the party going while spinning hip-hop and R&B on a state-of-the-art sound system.
Lavish place settings and floral arrangements covered the long dinner tables. First, we were served Chilled Heirloom Tomato Soup, then Melon Salad with Italian Prosciutto (thinly sliced ham). After that, we were asked to choose our favorite entrée: Filet Mignon with Bordelaise Sauce (red wine sauce), Crispy Onion Rings, and Arugula Salad, or Grilled Wild Salmon with Lemon Sauce, Herb Roasted Potatoes, and Sugar Snap Peas. I chose the salmon -- and it was wonderful. Spoil your family tonight with my simple Broiled Wild Salmon recipe.
The tall traditional wedding cake was decorated with lovely lavender roses. Although I always look forward to a fat slice of delicate wedding cake, they did something a little different. We were served a dessert trio of assorted mini-sweets. I love this idea, because three is always better than one! Khloe and Lamar did the whole "cut the cake" thing, but the rest of that gigantic cake sat there untouched all night. Shhh, don't tell anyone, but I think the other tiers on the cake were frosted and fake. It's all good, I've been a caterer for several years and I've been known to have a few tricks up my sleeve too.
