Easy Panko-Crusted Scallion Cod Cakes

Susannah Locketti: I love it when fresh cod goes on sale! This week, I turned the filets into cod cakes for under ten bucks. Traditionally made with cod and potato, my version is lightened up with panko bread crumbs. I served these as a main course by making four large ones. You could also make eight smaller cakes and turn them into cod-cake sandwiches with some tartar sauce. (Yum!) Best part is, they're fast and inexpensive to make. Love that!

Easy Panko-Crusted Scallion Cod Cakes

Ingredients:

1 lb. skinless cod
2 cups panko bread crumbs
1 egg white
1/4 cup sliced scallions
1 clove minced garlic
1 T lemon zest
Salt and pepper
1/4 cup olive oil (for pan frying)

Game Plan:

Heat a large, nonstick sauté pan over medium heat. Meanwhile, pulse the cod filets in the food processor until they are roughly chopped (but not mushy). Put chopped cod in a bowl and add 1/3 cup panko bread crumbs, the egg white, scallions, garlic, zest, salt and pepper. Mix thoroughly with a fork. (The mixture will be very moist.) Place the remaining 1cup panko bread crumbs on a plate. Form the cod mixture into four or eight patties, then press them onto the panko crumbs to coat them on both sides. Add olive oil to the hot pan and brown the cod cakes on both sides until firm. Garnish with lemon wedges and scallions. Serve with whatever veggies you have on hand, or alongside a cup of soup or salad.

Susannah's Money- & Timesaving Sense:

Removing the potatoes from the recipe saves time and calories. Replacing them with light and tasty panko bread crumbs still gives substance to the cakes without all the time involved in boiling potatoes.

Panko bread crumbs are all the rage right now. Check prices carefully at the grocery store. I saw them go as high as $4.79, which I find absurd! 4C makes a nice variety for under two dollars.
