Chef Nikki Shaw: It's that time of year again: Time to fire up the grill! This recipe for "Grilled Fresh Fish Tacos with Citrus Slaw" is always a big hit.

It's an easy, light and healthy choice -- and it also brings people together. Everyone can gather around and enjoy the weather and the wonderful aroma of the fresh fish grilling. It's nice to arrange all the condiments and let everyone create their own masterpiece. Offer a wide variety of "fixins," such as: guacamole, tomato salsa, fruit salsa, sour cream, diced tomatoes and fresh lime wedges. People appreciate and enjoy the option to customize their food to their liking.

For this particular recipe, the perfect fish is halibut. The firm white meat is thick and delicately sweet. When grilling fish, it may stick to the grate or fall apart. The olive oil will help prevent it from getting stuck, and it gives the seasonings something to hold on to. (It also adds great flavor to the halibut.) If your fish falls apart when you turn it, don't panic: This recipe requires you to break it up anyway.

NIK TIP: If you're not in the mood to grill, simply place your halibut under the broiler for five to seven minutes on each side.
