Chicken with Warm Citrus-Apple-Onion Slaw

Chef Susannah Locketti: What mommy-fridge doesn't contain a leftover apple and orange? This quick-and-easy chicken dish uses everyday ingredients to create a light and sophisticated supper. Boneless, skinless chicken breasts are pounded thin and cooked in a small amount of olive oil. While the chicken browns, a simple slaw made with finely sliced cabbage, red onion and apple is dressed with the juice and zest of an orange, plus olive oil and a splash of Asian ponzu sauce. Warmed at the last minute, the slaw is a healthy side dish served beneath the tender chicken.

Chicken with Warm Citrus-Apple-Onion Slaw

Serves 4

2 large chicken breasts, cut into four pieces and pounded thin
2 tbsp. olive oil
2 cups finely sliced cabbage
½ cup finely sliced red onion
1 apple, finely sliced
Juice and zest from an orange (reserve 4 slices for garnish)
2 tbsp. olive oil
1 tbsp. ponzu sauce
Fresh basil (for garnish)

In a large nonstick skillet over medium heat, add two tablespoons of olive oil. Season the chicken and brown on both sides. While the chicken is cooking, make the slaw by combining the cabbage, onion, apple, orange juice and zest, olive oil and ponzu sauce in a medium bowl. Toss to coat evenly. Move the cooked chicken to the side of the pan and add half of the slaw. Warm quickly and transfer to two dinner plates. Top with two pieces of chicken. Repeat with remaining slaw and top with last two pieces of chicken. Garnish with orange wedges and fresh basil. Season to taste.

Susannah's Time- and Money-Saving Tips:

  • Pounding the chicken out thin allows it to cook up in minutes. Buy boneless chicken when it goes on sale for under $2 per pound.
  • Using up pantry items is cost-effective and allows for some fun creativity. To save big bucks, build your grocery list and meals around what you already have on hand. In this case, I had an apple, an orange and a nice condiment (ponzu sauce) to build a meal around. Ponzu sauce is a blend of citrus juice and soy sauce.
  • I grow my own basil, and it saves me $1.99 at the grocery store every time I use it in a recipe. Be sure to bring some of your summer herbs indoors before it gets too cold to enjoy them year 'round!
  • Feel free to use a bagged cole slaw to save even more time.

Ponzu sauce -- Free (on hand; it sells for $3.29)

Total Cost: $5.12

Pantry +'s:

  • Sesame oil would taste great in this if you had it on hand.
  • Feel free to substitute a tablespoon of reduced-sodium soy sauce for the ponzu sauce.
  • Scallions would be a nice touch in the slaw if you had some in the fridge.
