Lower-Fat Latkes!


Ingredients
4 to 6 medium zucchinis (or other squash), grated
1 bunch green scallions, finely chopped
1/2 red bell pepper, finely chopped
1 egg, lightly beaten
1/2 cup all-purpose flour
1/3 cup grated Parmesan cheese
Ground black pepper (to taste)
Vegetable oil for frying
Method: Using a fork, mix all ingredients except the oil together. Place a large skillet over medium-high heat and add the oil, about 1/4 inch deep. Place individual heaping spoonfuls of the mixture into the pan, and press into circles about 1/3 inch thick. Cook until brown and crispy on both sides, pressing down with the back of your spatula several times; repeat with remaining batter. Garnish with sauteed apples or applesauce and a dollop of sour cream. Serves 4 to 6.
