I have three kids...should we book adjoining rooms next time we travel, or cram in one to save money?

Safety should be your first concern. Of course it would depend on the children's ages, but mine are too young to stay in an adjoining room. I'm all for privacy, but I'm not a fan of the kids having their own hotel room.
Look for hotels where the 2 beds are queens and then if kids are small you can fit them together suites with a pull out sofa are good. If one is older and won't sleep with a girl then maybe you can try dad with boys mom with girls. Long story short if you want you can go with 5 in a room you just can't tell. If one is a baby many hotels have cribs.
Most hotels we have stayed in have a legal limit to the number of guests they can put in one room. The hotels we have stayed at do not count children under 10 or so in that number. We usually get at least two rooms with double beds and if the older teens are coming we get three. My husband and the boys share one room the girls and I share one room. If my DH and I want time alone we just get one of the older teens to take over in our room and we get another room for us one night.
How will you be using the room? Will you be out all day and use the room for baths & bed? Then 1 room should be OK. But if you're going be in the room for several nonsleeping hours, 2 rooms will be needed for sanity! Also consider a hotel that has suites. They usually have a sitting room with a pull out couch and a bedroom - both with a tv so parents can relax in the bedroom & kids in the sitting room.
We always try to save money!!! But, comfort and sleep is important. I would look at the age of your kids and how well they sleep. If you can pull it off, then save the money!
